What is Canada's role in the global maple syrup market?

Answer

Canada produces about 75 per cent of the world's maple syrup, with Quebec accounting for roughly 90 per cent of Canadian production through about 11,000 maple producers.

Explanation

Canada produces about 75 per cent of the world's maple syrup, the remainder coming primarily from the United States (Vermont, New York, Maine). Quebec accounts for roughly 90 per cent of Canadian production through about 11,000 maple producers organised under the Quebec Maple Syrup Producers (Producteurs et productrices acéricoles du Québec, founded 1966). Annual Canadian production averages about 14 million gallons (53 million litres) and generates retail sales of more than $1 billion globally.

Production is highly seasonal. Sugar maple (Acer saccharum) and to a lesser extent red maple (Acer rubrum) are tapped in late February through April when alternating freeze-thaw cycles drive sap up the trunk. Forty litres of sap are concentrated by reverse-osmosis filtration and evaporation to produce one litre of maple syrup, which is graded by colour and flavour as Golden, Amber, Dark, or Very Dark under the Canada-United States harmonised grading system adopted in 2014.

The Quebec Maple Syrup Producers operates a strategic global maple syrup reserve, the only one of its kind in the world, holding up to 100 million pounds (45 million kilograms) in storage facilities at Laurierville, Quebec and other locations. The reserve stabilises producer prices in good and bad harvest years. The 2011-2012 Great Canadian Maple Syrup Heist, in which thieves stole $18.7 million worth of syrup from the reserve, became national folklore and inspired a Netflix documentary.

Indigenous communities have produced maple syrup for thousands of years; the practice was taught to French settlers in the seventeenth century. The Canadian Forest Service estimates that healthy maple stands could double current production. Climate change is shifting the geography of maple syrup production northward and shortening the sap-collection season in warmer years. New Brunswick, Nova Scotia, Ontario, and the Maritimes complement Quebec production. Federal Agriculture and Agri-Food Canada and the Canadian Food Inspection Agency oversee export inspection.

Why this matters for your test

Maple syrup is one of Canada's most distinctive agricultural and cultural exports. Recognising the 75 per cent global share and Quebec's 90 per cent Canadian share gives candidates clean numerical anchors.
